The Sunset Mogador truly shines when paired with our Crispy Squid, specially selected by our chef to enhance this dining experience.

Caught in the bountiful waters of the Atlantic off the coast of Essaouira, the squid is coated in a light, crispy batter and fried to golden perfection, offering an irresistible contrast between the crunch of the crust and the tenderness of the meat. Served with a lemony sauce made with fresh herbs and a hint of house-made harissa, they make for a distinctive accompaniment to the cocktail.

Essaouira is, above all, a fishing town. For centuries, its colorful boats have set out from the harbor every night, returning at dawn laden with the treasures of the Atlantic. Squid is one of its most iconic gems—caught in the cold, bountiful waters off the coast of Mogador, it embodies the city’s intimate, age-old relationship with the sea.

 

It is with this respect for local produce and Souiri maritime tradition that our Crispy Calamars were created. Coated in a light, crispy batter and golden-brown to perfection, they reveal tender, briny flesh that smells of the open sea. Served with a lemony sauce made with fresh herbs and a hint of homemade harissa, they pay homage, bite after bite, to the expertise of Essaouira’s fishermen.
