Apora – from ‘time’, in Greek – moves to its own rhythm. By day, poolside energy unfolds: cold mezze, aromatic Tomaccini salads, local Aegean gopes and shareable bites in a stylish space opening onto the shimmer of the water. As the sun starts to set, the mood softens. Pendant lights warm the rattan bar, the aperitivo trolley arrives and the Samos Sunset Spritz – Muscat, citrus and thyme – is brought to your table. Kapira bread follows, warm from the oven, dipped in olive oil and sea salt. The evening menu weaves bright Aegean produce with the gentle spice of Constantinople. Familiar dishes, reimagined.
