In addition to basic practices like eliminating single-use plastics and recycling programmes, properties like Hotel L'Échiquier Opéra Paris-MGallery are implementing long-term measures. Through the installation of water-efficient showerheads in May 2024, the hotel has recorded an estimated annual water saving of 84 m³, with a 6% decrease in water intensity in a year.
This pillar also includes biodiversity preservation. Take Cabot Bordeaux - MGallery Collection, which worked with local NGO League for the Protection of Birds and two nature experts to protect the property’s local flora and fauna, including combatting invasive species, reducing light pollution, and building habitats and shelters. Three beehives were installed, with 30kg of honey harvested in 2023. Another aspect is sourcing ingredients locally – Hotel Am Konzerthaus - MGallery Collection in Vienna, for example, sources 70% of meals within 75 km, with 100% of meals inspired by local cuisine. Ingredients include certified organic fish and local wines and juices.

Under Chef Jakob Karner’s leadership, traditional Austrian flavours are transformed into modern tasting menus that balance precision and creativity. 2. Community initiatives and local partnerships

In May 2025, the “Four Hands, Zero Waste” charity dinner united Executive Chefs Benoit Leloup and Oliver Mette in an eco-conscious fine-dining experience that featured local ingredients and zero-waste techniques.
