In 1806, the word “cocktail” appeared in print for the very first time. Now, MGallery is celebrating 220 years of creativity, technique and mixology trends through World Cocktail Months 2026. Two centuries of shakers in motion, flavours rediscovered, recipes reinvented and cultures reshaped through the art of drinking.

The perfect pairing: signature cocktails and curated bites

Flavours. Textures. Aromas. Memories. A cocktail by a master mixologist is a composition of all of these. During World Cocktail Months, it’s elevated even further: into a culinary mixology experience designed to be shared. A custom cocktail served alongside a thoughtfully crafted bite, created to bring people together through meaningful flavour-pairing principles.

 

 

Chef Pam × MGallery: A partnership that was meant to be

For our World Cocktail Months pairings and beyond, we are proud to announce a collaboration with Chef Pam, the World’s Best Female Chef 2025 and Asia’s Best Female Chef 2024.


Based in Bangkok, she has built a career that mirrors MGallery's own commitment to celebrating bold, singular stories. Her Michelin-starred restaurant Potong blends traditional Thai-Chinese flavours with contemporary technique, rooted in a deeply personal vision inspired by her mother's cooking. Like MGallery’s Committed to Her pillar, Chef Pam is actively shaping the next generation of female culinary talent through PAMS Academy and her Women-for-Women scholarship and internship programme.


Chef Pam's creations for this collaboration comprise five bites that will be showcased worldwide, as well as two bites for each of MGallery's seven regions. The cocktail eras: A journey through time

From the elegance of the 19th century to the bold imagination of tomorrow, we invite you to sip each era through our cocktail and food pairing experiences, presented in our glassware collection in collaboration with Maison Sarah Lavoine. Alcohol-free signature drink ideas are also available. 

 

 

Golden Age: The Botanist’s Waltz

Let’s begin where it all started. An era of quiet refinement, when cocktails were crafted with care and curiosity. In your glass, The Botanist’s Waltz unveils its flavours. Gin infused with jasmine brings a floral softness, lifted by maraschino liqueur, zesty lime and a kiss of honey. A delicate cloud of blueberry lavender foam lingers on top.
 

  • Your perfect pairing: Chef Pam's Tender Temptation Wings. Boneless chicken wings crisped and seasoned with toasted rice and citrussy sumac, finished with lime and a tamarind chili dip. 

 

 

Prohibition: The Prohibition Martini

The lights dim. The door closes softly behind you. Welcome to the 1920s, where creativity thrives in secrecy. The Prohibition Martini is not what you expect. Parmesan-infused gin lends a surprising creaminess, balanced by Italian vermouth, a touch of pisco and the crisp radiance of cornichon. From salty to savoury and refined, each layer of flavour reveals a new definition.
 

  • Your perfect pairing: Chef Pam's Caviar-Crowned Tartare. Hand-cut beef seasoned with shio kombu, resting in a crisp cone, layered with cool chili crème and crowned with caviar. 

 

 

Age of Entertaining: Midnight Fizz Society

The room shimmers with anticipation. Silk, laughter, the soft clink of crystal. The Midnight Fizz Society captures the exuberance of the 1930s, when cocktails became the centrepiece of celebration. Built around the smooth elegance of vodka and the bright lift of Cointreau, it opens with a citrus sparkle that feels instantly festive. The effervescence of Champagne carries the flavours upward, giving it a delicate balance of sweetness and acidity.
 

  • Your perfect pairing: Chef Pam's Sun-Kissed Crab. Lump crab folded with mustard mayo, accented by aromatic yellow curry and chive. 

 

 

Mid-Century Rebirth: Sunset Botanica

In the 1950s, cocktails became more expressive, infused with a sense of post-war renewal and optimism. The Sunset Botanica reflects this shift, swapping the nostalgia of the Shirley Temple for a tart yet floral sip with an in-house balsamic grenadine. Balanced and aromatic with a gin base, it carries notes of pomegranate and lemon that are both grounding and luminous. An unexpected cherry leather topping creates a refined harmony.
 

  • Your perfect pairing: Savour a region-specific bite such as the Taste of Felicità, golden butter-toasted sourdough layered with fresh ricotta, slow-cooked tomato jam and seared courgette.

 

 

Island Spirit: Tropic Mirage

The Tropic Mirage signature cocktail is your invitation to drift. Lush with tropical notes, it captures the carefree spirit of the 1960s in a tiki reinterpretation of the original 1934 Zombie. Caribbean rum anchors this signature cocktail with a mellow richness, while pineapple, passionfruit and mint add a humming radiance. The result? A fluid, evocative blend of sweetness and brightness that feels like a truly memorable summer captured in a glass.
 

  • Your perfect pairing: Soft-Hearted Avocado, a lightly battered avocado fried to a delicate crunch and served with acid-driven salsa. 

 

 

Modern Icons: Cult of Verde

We return to the 21st century, where precision defines creativity. The Cult of Verde is sharp and confident, a fresh take on the classic Last Word that keeps its balanced heritage while adding a gentle savoury twist. Instead of gin, tequila and mezcal form its base, along with the original flavours of maraschino liqueur, green Chartreuse and fresh lime juice. Flavoured oils of chili, parsley and mint give a subtle earthiness and hint of spice.
 

  • Your perfect pairing: Chef Pam's Truffle Shuffle Polenta. Warm polenta bread, toasted to a gentle char, paired with truffle butter and parmesan cheese. 

 

 

The Future: Archive of Tomorrow

Finally, a shift. The familiar gives way to possibility. The Archive of Tomorrow signature cocktail transforms the flavours of the Mediterranean basin into a refined serve shaped by smooth tequila. The zesty citrus notes of Cointreau and verjus lead, supported by the subtle sweetness of a fennel-saffron cordial and the unexpected delight of a tomato crisp. This cocktail asks you: What does the future hold?
 

  • Your perfect pairing: Chef Pam's Squid’s Midnight Dip. Golden-fried squid dusted with kombu salt, served alongside a squid-ink dip.

 

 

A global celebration of World Cocktail Months, locally told

Every MGallery property around the world offers the full cocktail eras journey, but each hotel brings its own voice to the table through the food pairings. These are crafted in-house, allowing local chefs to weave in regional ingredients, cultural references and personal creativity. You may order the same signature cocktail in Thailand or Brazil; what arrives alongside could be corn ribs in a spicy-sour tom yum sauce, golden-fried lamb and black bean pastéis or something else entirely, but always signed by Chef Pam.


Beyond the glass, MGallery hotel bars invite you deeper into the world of mixology through unique experiential concepts. Era-themed evenings transport you through time, while masterclasses allow the curious to shake, stir and discover for yourself.
